3/4 cups butter
1/4 cup powdered (confectioner's) sugar
2 cups flour
1/2 teaspoon baking powder
1 teaspoon water
1 teaspoon vanilla extract
1 1/2 cups pecans, finely chopped
1 1/2+ cups powdered sugar
Preheat oven to 375 degrees F.
Grease 2 large cookie sheets.
In large bowl cream butter and the 1/4 cup powdered sugar until light and fluffy. Add 1 cup flour and baking powder. Beat until well mixed. Add remaining flour, water, and vanilla until well mixed. Dough should be stiff. Stir in pecans. Pinch off small pieces of dough and form into finger shapes (hence the name) (works just as well in small balls).
Place on cookie sheet and bake 10-12 minutes at 375 until light golden. Immediately roll in the 1 1/2 cups powdered sugar. Cool on wire rack. Roll again in powdered sugar.
